We asked Richard Cubbin, executive chef at Alison Price & Company, to predict what might be served for the royal wedding feast. We think what he came up with will have Prince Harry and Meghan Markle (plus all of their VIP guests) asking for more! He says:

"I took ideas from Cornwall, Wales and California for a fusion menu. I wanted it to be special, but down-to-earth and friendly, like the couple themselves.

The US Comes to England

"One of the canapés, the crispy club sandwich with chicken mayo, fried quail's eggs, maple-glazed bacon and pork scratching crumb, offers a twist on typical English pub grub. The maple and 'Club' style adds a hint of North America.

Best of British

"Borage flowers are found in British gardens and used for Pimm's. I've included them in our miniature tacos of shrimp mayonnaise with marie rose and cucumber ketchup. Ideal for a spring do.

A Cornish First Course

"Our first course of cornish white crab on crisp fennel, lemon and dill waffles, with Bloody Mary jelly, BBQ baby cucumber, radish and a Royal Gala apple salad with an elderflower and lemon balm dressing, links to the Duchess of Cornwall. Bloody Mary jelly is a nod to the version the Americans like to use.

The Palace

"A main course of roast fillet of Royal Windsor Estate Beef with sticky glazed beef rib, golden rings of potato, sparrowgrass, sunchoke and herb purée and Californian Merlot jus, celebrates the Royal family's incredible estate beef. I worked at the Palace for a short time and it was delicious. The 'golden rings' are a nod to the couple's wedding bands.

The Couple

"For dessert: Harry's Eton Mess with Meghan's Imacculate Heart Tidy. These are based on the couple's schools: the same ingredients in both, but deconstructed for Harry's; neat and heart-shaped for Meghan's.

Doing Things Differently

"I chose an alternative way to serve the petits fours: chocolate and Bourbon King Edward Cigars with strawberry shortbread matches and pecan pie-flavoured cigar ash. These are always a hit.

California Dreaming

"The Californian Point Reyes blue cheese I'd serve on the after-dinner trolley is a real 'connoisseur'. The Duchy Highgrove Estate organic oat bicuits are from Prince Charles' estate, and the Champagne grapes? Well, you have to finish with Champagne!"
