Instantly upgrade an all-white cake into an ombre masterpiece using a bit of food colouring and polka dot perfection.
Split 1kg of ready-to-roll white icing into eight balls of equal size. Knead in drops of food colouring, making each ball slightly darker than the one before. Roll the balls out to a thickness of 2mm, then use a cookie cutter to create 50 discs. Allow to dry. Make a glue paste using icing sugar and a little water. Stick discs to the cake in evenly spaced bands, from dark to light, by painting the back of each one with the sugar paste.
