Meringues, macarons, couture chocs, artisan gelattos and sumptuous cakes; we've had them all. So when something new comes along (remember the cronut days?) we get very, very excited... Our latest obsession? The biskie.
Part biscuit, part cookie, part cake, part magic - the biskie is the baking-child of London bakers Cutter & Squidge.
For those who would call this a whoopee pie: you are wrong, this is more biscuity-cum-cake-like. Whilst similar to a whoopee or a macaroon in that biskies are filled with light buttercreams and handmade jams and caramels - yum! - they are definitely very different in texture and technique.
Everything from the Cutter & Squidge kitchen is handmade using ingredients from the British Isles - right down to their free range eggs, farmhouse butter and even their Madagascan vanilla (which is produced by a small British Company called Little Pods).
All-natural flavourings and a total lack of artificial coulourings and preservatives mean that biskies are always fresh and perfectly balanced in the sweet scales, too. Even their floral decorations live up to this standard!
The variety of flavours available are as creative as their names: our favourites include the Triple C, chocolate, chocolate and salted caramel; OMG it's Green, green tea with white chocolate and raspberry; Chilli Chilli Bang Bang, ancho chilli almond praline with milk chocolate; and You're my Pearl, blueberry with earl grey and a lemon chocolate pearl.
Currently stocked in Selfridges and available to order online, there is talk of a wedding service coming soon too - so watch this space!
