170g cooked brown rice
160g roasted beetroot
150g baby vine tomatoes
240g blanched broccoli
100g blanched green beans
75ml olive oil
Juice and zest of 1 lemon
Himalayan salt and pepper
50g goats cheese or feta
Chop the tomatoes in half and put into a bowl.
Add the brown rice, beetroot, broccoli, green beans, olive oil, juice & zest of the lemon.
Season with Himalayan salt and pepper.
Chop the dill and goats cheese and add to the salad.
Mix all together and serve.
