For anyone with a serious sweet tooth, welcome to chocolate heaven! Over 200 profiteroles – dipped in marbled and dark chocolate, finished with 24ct edible gold leaf – make up this 3.5ft-high tower. The bottom layer uses baker Katie Sanderson’s special recipe; a super-rich truffle cake.

Drawing on her interest in ceramics, Victoria Watkin-Jones wanted to embrace texture rather than relying on colour to add interest. It works beautifully for this lovely vanilla-bean sponge and raspberry compote cake. For a natural effect, each individual petal was wired so they could be manipulated to look as realistic as possible. When the cake is lit from behind, it takes on a delicate, ethereal glimmer.
